Limit data from entries field choices based on user meta

I’m looking for a way to limit choices in some data-from-entries dropdowns based on the user.   My employee evaluation system I’ve build with formidable has a main form which has data-from-entries fields for selecting a Location -> Department -> Employee  to evaluate.   What I want to do is make it so the Location and Department parts are filled in automatically (with no option for the user to change them) so that the user only has the ability to select users from his/her own location/department.

What I thought I might try to do this is assign the user some meta data for Location and Department and somehow base it off that.

Is there any straightforward (or even not so straight forward) way I might go about accomplishing that?  This is kind of the last piece of the puzzle to this whole system.
