Basically, fadeOut/In is the default. I would like to have the option to simply hide/show, or maybe even slideDown/slideUp? Is that possible without getting into the code?

There isn't a way to change the fadeOut/In without modifying the Formidable Pro source code. Changing the source is highly discouraged as any updates to the plugin would override your changes, and a mistake can break a lot of core functionality.
