Hello Stephanie and Steve,
Our orchestra director has dozens of musicians applications to review (there were 86 of us at our last march concerts), and editing the data one at a time is very time-consuming.
Is there a way to edit them all at once, thus avoiding using the same editing page over and over?

If they are set up as posts, you can do this from the WordPress Posts page. Otherwise, it needs to be done at the DataBase level.

I've never used posts yet, so I'll look into this.
Is it possible to turn existing data collected thru the form into posts?

This can be done, but it is a bit clumsy right now. In order to create posts from existing entries, you need to set up your form to create posts then go through each entry click edit, then update. The post will then be created upon update.
